Avocado Grapefruit Salad

This is a reasonably simple, refreshing salad, perfect for those hot summer days. It is colorful, bright, and full of flavor. My girls absolutely love avocados and tend to add several extras for added creaminess. I usually add sunflower seeds, broccoli sprouts, and onions to change it up a bit. I typically play around with flavors and have the family tell me “yes” or “no.”

Ingredients:

3 large Ruby Red grapefruits (or whatever you like)

2 heads of butterhead or Bibb lettuce ( Iike spinach too)

3 large avocados thinly sliced or cubed

1 tablespoon honey

1 tablespoon fresh lime juice

2 tablespoons olive oil

1/2 teaspoon kosher salt

1/4 teaspoon ground pepper

1 tablespoon chopped fresh parsley

1 tablespoon chopped fresh cilantro

Flaky sea salt

1. Peel the grapefruit and remove sections. Place over a bowl to catch all the juices. Measure 2 tablespoons of the juice to add to the dressing.

2. Place lettuce (or spinach) in a bowl and add grapefruit sections and avocado.

3. whisk together grapefruit juice, honey, lime juice, 1 tablespoon of olive oil, and salt and pepper for the dressing.

4. Add the dressing to the salad. Sprinkle the parsley, cilantro, salt, and remaining olive oil to taste.
